This slow cooker macaroni and cheese is not only delicious but also a sneaky way to incorporate some hidden veggies into your kids’ meals. The creamy, cheesy goodness is sure to be a hit with children of all ages!
Ingredients:
- 2 cups elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups milk
- 1/2 cup chicken or vegetable broth
- 1/2 cup pureed vegetables (e.g., carrots, cauliflower, or butternut squash)
- 1/4 cup unsalted butter, cubed
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional, for a little kick)
- Cooking spray for greasing the slow cooker
Instructions:
- Grease the inside of your slow cooker with cooking spray to prevent sticking.
- In a large bowl, combine the shredded cheddar cheese, mozzarella cheese, and Parmesan cheese. Set aside.
- In another bowl, mix together the milk, chicken or vegetable broth, pureed vegetables, cubed butter, salt, pepper, and paprika (if using).
- Place the elbow macaroni in the greased slow cooker.
- Pour the liquid mixture over the macaroni and stir well to combine.
- Sprinkle the mixed cheeses evenly over the macaroni and liquid.
- Cover the slow cooker and cook on low for 2 to 2.5 hours, or until the pasta is tender and the cheese is melted and creamy.
- Stir the macaroni and cheese well before serving to ensure a creamy consistency.
